Twice baked potato casserole

The Pioneer Woman has a great recipe for this, but after following it a few times, and ending up with enough potatoes to feed a small army, we have adapted it.

6 potatoes, scrubbed and baked
12 oz. Sour cream
1 1/2 sticks of butter
16 oz. cheddar jack cheese
1 bunch of green onions, chopped
1/2 lb. bacon, cooked until crispy (can be left out)

Mix the insides of all the potatoes, plus a little bit of potato skin, in a bowl with all of the rest of the ingredients, except for the cheese. Mix half of the cheese in with the mix, but leave the other half out. Put the mixture into a corning ware bowl, and top with remaining cheese. Bake at 325 for 30 minutes.

This works best if you make this right after you have cooked the potatoes, so they are still warm.

Best breakfast muffins

1 lb sausage (hot or regular or low fat)
8 eggs
1/4 c skim milk
1/2 T veg oil
1/2 tsp baking powder
cheddar cheese

Preheat oven to 375
Cook the sausage and put it in a muffin pan that has been sprayed with Pam.
Mix the eggs, milk, oil and baking powder.  Pour over the sausage
Top with cheese and bake until the egg is set

These freeze really well.  Also, they can be chopped up for an instant breakfast burrito.

Almond truffles

These are super yummy - almost like buckeyes or peanut butter-chocolate truffles without all the self loathing at the end.  All of the ingredients I found at our Kroger in the organic section.  They are gluten free, low sugar, high protein.   Paleo friendly.  Enjoy. 

TRUFFLE MIX:
1/2 c. coconut flour
1/2 c. almond flour
1 c. almond butter
2 tsp. coconut oil (melted)
1 T honey
2 tsp vanilla
1/2 c. Enjoy Life chocolate chips (like these)



COATING:
1/2 c. Enjoy Life chocolate chips
1 T coconut oil

Mix the truffle stuff together in a bowl.  Roll into balls and chill for 15-20 minutes.  Melt the coating in the microwave (it takes almost no time - watch it closely - like 1 min or less!).  Roll the balls in the chocolate coating and chill a little longer. So good.

Holly's Bean Soup

Add the following to a crock pot and cook on low for 4 to 8 hours (however long you need!)

2 cans yellow hominy (drained)
2 cans kidney beans (drained)
2 cans black beans (drained)
2 cans pinto beans (undrained)
2 large cans of diced or stewed tomoatoes
minced garlic (I add a tablespoon, but I really love garlic!)
sliced smoked sausage (I use a pound of kielbasa or other sausage)
1 jar of jalapenos (I leave this out!)

Serve with grated cheese
